Hello, hungry ones!

When someone says apple pie, most people think, oh hey thanksgiving along with pumpkin pie and cornbread. And turkey, of course. Not me, or my family at least. Apple pies are usually served at Christmas, and because we are Filipino, Christmas starts at September! So, yeah apple pies were made as early as September when I was growing up. We did not put up Christmas decor until December, but our Christmas food mania started  waaaay early!


So join my family tradition and let’s make some pie! Yeah sure, make it for Thanksgiving – it’s just around the corner!

What you need:

Pie Crust (Double Crust Pie):

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 2/3 cup butter
  • 6 – 7 tbsp cold water

Pie Filling:

  • 8 cups thinly sliced cooking apples
  • 1 tbsp lemon juice
  • 1 C sugar
  • 2 tbsp all-purpose flour
  • 1 tsp cinnamon
  • dash of nutmeg
  • 1 tbsp butter or margarine

What to do:

1. Like our peach mango pie, we will make our pie crusts first. Get a medium mixing bowl and stir flour and salt together. Cut in [cold] butter until they are the size of peas. Sprinkle 1 tbsp water over part of mixture, and gently toss with a fork. Push to the side of the bowl, and repeat until all is moistened. Form dough into two balls.

2. Okay now let’s make the filling: put lemon juice on your apples. Then in a mixing bowl, combine sugar flour, cinnamon and nutmeg. Mix!

3. Add sugar mixture to the sliced apples and toss to mix.


4. Let’s go back to the mounds of dough. Roll one using two wax papers. Sandwich it in! Roll, roll and roll until it fits in your pie plate. Place it then. Trim the sides and put the apples in!

5. Now get the other dough and roll it like you did – between two wax papers. Place on top of the mixture. Should look like a pie now. Trim the extra dough on the sides and seal the sides using a fork like this. Cut slits and poke holes on top of the pie crust to let the steam escape. Brush with butter and bake in 375 degrees for 25 minutes.

6.  If your kitchen smells like Christmas after 25 minutes, it’s done. Cool on pie rack, and serve with vanilla ice cream if you want!
