Hello hungry ones!

I can’t believe it’s been, what, five months since the last post. Of the million life-changing events that have happened since then, this Ella went to establish an HQ in a place called Hatyai. You can google it but I’ll save you the hassle by telling you it’s in Thailand. Relocating in a foreign place is stressful – five months into this relocating thing and I still can’t find normal flour in town, you know what I mean?

Good things come from stressful stuff too. The awesome SO moved in – yep, adjustments are in order but with a (TINY) kitchen and fridge, we are making glorious (I mean it) edibles. We can share em, but with limited resources, we’d rather have you make it in your homes 🙂 As a Catholic, I was indoctrinated with the maxim “Give them fish and they will ask for fish daily but teach them how to fish and they will fish for a lifetime” or something like that. I am a bad Catholic, yep.

Anyway, roti wraps – it’s amazing what you can do with an all-purpose pastry. Man, it’s delish. I never had it before and we found it just lying in the freezer of the local grocery. This dish is easy to prep and so healthy, you’d want everyday (as I do). Ash made this amazing dinner for us – lucky girl!

Vegetarian Roti Wraps

Things you need:

1 tsp coconut oil

1 roti/all purpose pastry

1 vegetarian burger patty

1/2 onion

3 poached eggs

mozzarella

spinach

 

What to do:

1. Cook the roti according to package directions. We use coconut oil as a frying medium.

2. Think sandwich. Slice the onion as you want them in you sanger. Cook the veg burger and break it into smaller pieces. Arrange them on the roti on top of each other. Add a handful of spinach and cheese when it’s still hot so the greens wilt and the cheese melts.

3. Voila! You’re welcome. By the way, last night, we had garlic, mushrooms, spinach and cheese. It was phenomeballs. See, glorious stuff in the Ashella kitchen!
